Healthy Gluten Free Pancakes


The recipe base consists of only two ingredients and both are super healthy.

This is a fabulous recipe for health conscious and/or gluten free individuals.  As a pancake or bread replacement, your imagination sets the limits.

A banana and an egg, is all it takes to create the batter for your healthy pancakes, add one or more stir-ins and toppings to make it uniquely yours.

We all know bananas are a healthy source of potassium, but the potential benefits are often obscure. 

According to Medical News Today, bananas have several potential benefits. The potassium in bananas can help keep blood pressure in check and aid in healthy heart function. As part of a diet high in vitamin C, fresh fruits, and vegetables research found a significant reduction in cases of childhood leukemia and colorectal cancer.

Records show, a banana a day as part of a high-fiber diet, reduced glucose blood levels in type-1 and 2 diabetics.

Often bland diets used to treat diarrhea include bananas.

The fabulous tryptophan in bananas helps boost memory.

The Imperial College of London claims one banana a day significantly reduces the risk of childhood asthma.

Eggs are a great source of protein, b vitamins, and selenium. Many heart and blood vessel disorders improve with the addition of selenium.

My stir-in today is chia seeds. Chia seeds contain protein and omega-3 fatty acids. 

Omega-3 fatty acids are helpful in the treatment of rheumatoid arthritis, migraine headaches, skin cancers, and numerous other serious illnesses.

The numerous possible health benefits with this combination are just too plentiful to mention. So make some for you and yours and enjoy!

Healthy Gluten Free Pancakes

Ingredients

1 ripe banana
1 egg

Optional Stir-ins (Use your imagination)
I used:
1 tablespoon chia seeds soaked in apple cider for about an hour. (In my opinion: soaking the seeds in liquid aids in the digestion.)
½ teaspoon vanilla extract

Cooking oil (Use your favorite.)
I used:
½ teaspoon of coconut oil

Topping (Again, use your imagination.)
I used:
Strawberry Real Fruit Spread
