Gluten Free No Bake Peanut Butter & Chocolate Bars


It’s that time of year; sweet treats take center stage at parties and family gatherings.  Gluten free doesn’t mean you have to miss out on the fun or deny yourself a few sweets. Here’s an excellent treat I put together to take to a cookie exchange.

Ingredients

½ cup unsalted butter
½ cup brown sugar, packed
1 teaspoon almond extract
2 cups gluten free creamy peanut butter
2 cups gluten free semi-sweet chocolate chips

Directions

Over low heat, melt butter in a medium-sized saucepan. Add sugars, peanut butter, and almond extract, mix well. Spoon mixture into a 9X13 inch baking dish and spread evenly.

Melt chocolate chips in a double boiler or microwave and spread evenly over the top of the peanut butter mixture. Let cool on the counter top before cutting into bars.
